核桃糯米糕 (Walnut Glutinous Rice Cake)

Ingredients:

½ cup walnut kernels (roughly chopped)

½ cup raisin (rinsed and drained)

2 tbsp roasted white sesame seeds

80g caster sugar

350ml warm water

150ml full cream milk

400g glutinous rice flour

40g corn flour

30ml corn oil

Preparation Instructions:

  1. In a large bowl. Add caster sugar and warm water. Whisk until sugar dissolved.
  2. Add in full cream milk and glutinous rice flour. Whisk to combined.
  3. Add in corn flour. Whisk to combined.
  4. Add in corn oil. Whisk to combined.
  5. Lightly oiled an electric baking pan. Sprinkle evenly with 1 tbsp of roasted sesame seeds, ½ cup of walnut and ¼ cup of raisins.
  6. Pour in the batter. Just enough to cover all the ingredients. Covered. Bake at medium heat for 8 minutes.
  7. Once is set. Pour in another layer of the batter. Sprinkle with the remaining 1 tbsp of roasted white sesame seeds and ¼ cup of raisins. Covered.
  8. Once set. Flip it over, brush the top with some oil and bake for another 8 minutes.
  9. Once ready. Remove from the pan and leave to cool completely before cutting into desire sizes.
  10. Serve.
